well .. janji tetap janji ... soo ini resepi serunding kelapa ..
Serunding kelapa ni biasanya belah pantai timur atau negeri Kelantan je kot yg ada jual ? tak pasti lak .. tapi aku suka sangat makan serunding kelapa ni ... hari hari pun takpe .. more to comfort food bagi aku la .. bukan untuk menu main sarapan ... more to desert for me ..ahaks ...
usually kalau kat Kelantan ... warna dia gelap kehitaman lagi n even sweeter (well staple to Kelantan rite .. sweet) tapi bila makan ... rasa dia sangat perfect .. even dengan nasi impit .. kalau nak makan dengan nasi kerabu atau plain rice .. kurangkan manis dia ..
sangat senang n x banyak bahan dia ... wahhh mak nak speaking london ahh .. (hahaha hancuss)
ingredient :
4 @ 5 stalk lemon grass (slice)
1 coconut flesh grated (fry without oil until golden colour..put in a big bowl and keep cold/warm)
5 @ 6 Mackerel fish ( **) the more fish flesh .. the best
1 teaspoon black pepper bean
5@6 shallots (slice)
1@2 thin slice ginger
sugar & salt to taste
1. Shallot, lemon grass, black pepper corn, ginger (pound until fine)
- must use mortar/pestle to make it more nicer taste (mum said)
2. Put fish flesh - pound a bit until the flesh is fine and mix with all the ingredient (just a few pound really less than 10)
3. take out everything pour into the coconut bowl
4. Put sugar and salt .. mix well .. taste (usually a bit sweet)
5. can eat with rice cubes, plain rice or u can eat with nasi kerabu

other ingredient (water, salt and asam keping*)
1.clean fish,
2. arrange clean fish in a pot
3. pour water until fish level
4. put 2 or 3 course salt and 3 slice of asam keping
5. boiled until fish is fully cook and strain the water .. let cool
6. debone
* asam keping (type of fruit Garcinia atroviridis which been process n dried for cooking)
